braised short ribs (sooo 2009, but, hey, it's tough to serve this many people at once)

Last night, Abacus chef/owner Kent Rathbun allowed chef Marco Busatamante of Cabo San Lucas’ ultralux Capella Pedregal resort to commandeer his restaurant kitchen, where Bustamante drew plenty of admiration from a packed house. The event allowed Rathbun and Bustamante to promote Capella Pedragal’s tony resort, where Rathbun will be guest cheffing, teaching cooking classes and touring local farms on October 26.

“There are a few rooms still available if you want to join us,” Rathbun told the crowd of more than  100 diners.

Here’s a taste of what Bustamante served last night.
