Master somm James Tidwell runs the show at the Four Seasons in Las Colinas, which is to say he is in charge of everything that lubricates the tony resort that will soon host the Byron Nelson golf tournament.
But Saturday night, Tidwell’s concentrating his considerable talent on a wine dinner with Cote Bonneville, whose estate bottled DuBrul vineyard wines are Washington state superstars.
Cafe on the Green’s paring their artful cuisine with five Cote Bonneville wines, which include their limited production estate Cabernet Sauvignon and Carriage House wines, plus a Chardonnay, a Cab Franc Rose and a late harvest Riesling. Not to be outdone, the Cafe chefs have created a menu that includes five-spiced waffles with pecan brittle, green apple and cardamom (to pair with the Chardonnay), plus cocoa-dusted duck breast with mushrooms, leeks, swiss chard and Amarena cherry sauce (to pair with the 2006 Carriage House red blend).
Why can I be so sure this is gonna be a fantastic dining event? Because Tidwell, both a master sommelier and a trained chef (he graduated from the Culinary Institute of America), is a superstar when it comes to pairing food and wine. Who else would think to pair Thai-curried pineapple, lump crab and grapefruit with both Riesling and Cabernet Franc? Crazy? Like a fox.
