The Dallas Fairmont Hotel’s executive sous chef, Paul Peddle , has been promoted to executive chef of Fairmont’s Palliser Hotel in Calgary, Alberta, Canada. Peddle will continue to work beside Pyramid executive chef Andre Natera until late August, then he’ll head north. As a team, Peddle, Natera and sommelier Hunter Hammett transformed Pyramid into one of the city’s best restaurants.
