Just off the phone with Velvet Taco‘s exec chef, John Franke, who sends word (and pictures) of this week’s special WTF (Weekly Taco Feature) taco.
“Every day this week, from Monday through next Sunday, we’re going to be roasting a whole Red Wattle heritage pig out front of Velvet Taco,” says Franke. “It’ll roast all day in our la Caja China, then we’ll pull it apart for tacos until the meat runs out.”
The pork gets stuffed into a blue corn tortilla, then topped with tomatillo salsa, roasted corn, pico de gallo, pepper Jack cheese and arugula.
