I don’t know how I missed this, but last year PR pro Jeffrey Yarbrough, a seventh-generation Texan, successfully lobbied the Texas Legislature to have October 26 officially recognized as Texas Chicken Fried Steak Day.
My favorite CFS comes from the Ranch at Las Colinas, where chefs Grant Morgan and John Franke massage a hunk of cube steak with seasoned flour, stretching it to a flat disk that leaves the flavor no where to hide.
