Chef Graham Dodds has a new home: Quincy’s Chicken Shack in Coppell


The wayward son has found a new home.

After the demise of his Wayward Son restaurant a few weeks ago, chef Graham Dodds is back on the range, tweaking recipes and operations at Quincy’s Chicken Shack, chef Jason Boso’s busy Coppell restaurant.

“He’s been helping us improve everything,” said Quincy Hart, the restaurant’s namesake and one of Boso’s partners in the venture, which recently expanded its business hours to include lunch as well as dinner. “We’re smashing and frying the roasted potatoes now,  glazing the rotisserie chicken and we’ve added cornbread to the menu.”

“It’s not the exact cornbread that I served at Wayward Son, but it’s close,” said Dodds when I caught up with him yesterday. “I really like what Jason is doing here and look forward to helping him expand this concept.”

The next Quincy’s is slated for Mansfield, followed by a push into Frisco.
