Exclusive: Saint Rocco’s, new casual Italian joint from former Eatzi’s chef Jay Valley, to open September 8 in Trinity Groves


Saint Rocco’s, the new casual Italian concept under construction in Dallas’ Trinity Groves development, will open September 8, confirms Trinity Groves partner Bob Sambol.

Saint Rocco’s chef and owner is Jay Valley, formerly the exec chef of Eatzi’s in Dallas’ Uptown.

While the menu is still raw, look for handmade pastas, soups, salads, roasted meats, charcuterie..but no pizzas.

“It will be New York Italian,” says Sambol, a veteran restaurateur himself who launched the Bob’s Steakhouse concept.  Saint Rocco’s will be “the Italian restaurant Dallas needs and is waiting for,” Sambol told me.
