Chef Nilton “Junior” Borges plans to open 12 new restaurants at Village Dallas development


Nilton “Junior” Borges is now the executive chef and vice president of culinary ops for a new development that will include 12 restaurant concepts located within a new entertainment district inside The Village.

You know The Village, right? It’s the 300-acre collection of apartment communities east of the Park Cities and North Park Center, which is basically Park Lane and Greenville Avenue. It was Party Central in the 1970s and early 80s, with discos and topless bars and even TGIFriday’s’ flagship restaurant. Guess what? Borges and The Village plan to reboot the resto mix there starting next year, though no other details have been announced.

Borges is super talented and a nice guy, too. Most recently, he tried to fix Circo TX (that didn’t go well) and left a cushy job at Mirador restaurant to launch a new restaurant with the guys behind Up on Knox (that didn’t go well either). But the third time might be better; he certainly improved CBD Provisions when he was there a couple of years ago, and he definitely showed he has culinary skills when he opened Uchi Dallas as its top chef.

We’re going to root for Junior. But 12 new restaurants in The Village? Hmmmmm.
