Fancy French restaurant Bullion is looking for a new chef – and a new direction.

Word leaked to us over the weekend that executive chef Bruno Davaillon exited the kitchen Saturday night and would not return. A search for a new chef is now underway.
When we finally heard confirmation from Davaillon – who we’re told remains an ownership partner in Bullion but no longer runs the kitchen – news of his exit had already swirled through the Dallas News blog. Davaillon texted me that his role had indeed changed. While he no longer oversees the “day to day operations,” he remains with the company and is looking to develop new “projects.”

I loved Bullion, but it’s widely regarded as a special occasion restaurant. Tough to make a living in Dallas with that kind of restaurant – Even if the chef has been awarded a Michelin star (as has Bruno when he cooked in Vegas).
