John Tesar Serving Season’s First Copper River Salmon at Spoon Tonight

Two days before the start of the Copper River commercial fishing season, John Tesar got his fish.

We told you last week that the city’s top seafood celebrity chef (who sometimes tells whopping fish tales) had promised to have the prized wild salmon on his menu by tonight. Here’s proof– submitted to the Hatch by Tesar himself.

How’s he gonna serve the sweet, rich fish? “Raw, with jalalpeno, compressed fuji apples, lava salt and micro cilantro,” he told me earlier today.
