New “Next Gen” Mexican Restaurant Slated to Open in Trinity Groves Next Month


Chefs Beto and Julian Rodarte are set to debut their version of elevated Mexican cuisine next month (and possibly earlier) with the planned opening of their restaurant in Trinity Groves, the Rodartes confirmed to the Hatch.

Beto & Son at Trinty Groves will replace Kitchen LTO as the newest addition to Trinity Groves. The father-and-son team describe their food as “Next Gen” Mexican cuisine. Judging from an early menu, the cooking will nod to the type of chef-driven, globally influenced cooking popular in many upscale Mexico restaurants right now.

The from-scratch kitchen will make its own tortillas each day and serve dishes such as crispy masa “fries”  constructed from fresh corn masa and potatoes, a heady tortilla soup, and “Mexican poutine,” an amalgam of those fries, queso, green chile sauce, queso fresco, chicken tinga and a fried egg.
