Local Yocal Farm to Market’s “Steak 101” Class will teach you all you want to know about buying, cooking, eating, appreciating steak


Local Yocal Farm to Market will teach its monthly Steak 101 Class twice this month (yep), October 5 & 26, 11 am – 2 pm at the Local Yocal market and butcher shop (213 N Tennessee St., McKinney, Texas 75069).

The class, taught by Local Yocal restaurateur and rancher Matt Hamilton (who happens to own 30 cowboy hats and sells beef for a living) and Local Yocal Farm to Market head butcher Adam Stone, is divided into three sections: 1) meat industry discussion, 2) the beef carcass and steak cuts, and 3) grilling and sampling of 16+ fine beef cuts, which is the part you’ll like best.

Hamilton and Stone are beef experts; they’ll give you the inside story about beef certification programs, meat grading, cattle raising, grilling, the difference between Wagyu and Angus, naturally-raised vs. grass-fed, and much more. You’ll also get to tour the cutting room to find out how the sausage is made, so to speak.
