Exclusive: Son of a Butcher will open in former Melios Bros. Char Bar space on Greenville Ave.


Fans of Melios Bros. Char Bar were no doubt disappointed when the 40-year-old burger joint closed up shop in September. But the prime location across from Trader Joe’s will soon be prime-beef powered again.

Front Burner Restaurants (the folks behind The Ranch in Las Colinas and Haywire, plus Whiskey Cake Kitchen, 60 Vines, Ida Claire and Legacy Hall, among others) has signed on to open Son of a Butcher in the former Char Bar space.

It’ll take several months to fully refurbish the 40-year-old space into Son of a Butcher, which specializes in palm-sized burger sliders built with locally sourced A Bar N Ranch prime wagyu beef and Martin’s potato buns. The original Son of a Butcher occupies a choice ground level spot inside Legacy Hall, the popular Plano food hall. Front Burner’s Jack Gibbons says the Greenville Avenue location will sport a drive-through and operate deep into the night, keys to success he learned from Velvet Taco, another concept he and his team created.

Look for Son of a Butcher to open late next spring or early summer at 2026 Greenville Ave, Dallas.
