Chef Matt Balke to breathe new life this fall into former Bolsa restaurant space


Matt Balke, a strong presence in the Dallas dining scene and one of the early farm-to-table enthusiasts, plans to breathe new life into the former Bolsa restaurant space in the BADlands.

Details are sparse, but we know that Balke will partner with his SigO, front-of-house restaurant veteran Corey McCombs, to open Encina, a modern American restaurant tinged with southwestern and California influences. Balke had cycled in and out of Bolsa as its chef during Bolsa’s nearly decade-long life. The restaurant closed in January.

Encina is slated to open this fall at 614 W. Davis Street in Dallas’ Bishop Arts District.
