Fiatto, a new casual Italian restaurant with handmade pastas, local/seasonal focus, headed for Uptown Dallas


A new cas-Ital restaurant is slated for a spring opening, this one from chef Kylil Henson and chef/sommelier John Dal Canton. The two are partners in Fiatto, a casual Italian spot in West Village at 3700 McKinney Ave. in Uptown Dallas.

A restaurant spokesperson says Fiatto will make its own bread, pasta and mozzarella, and its menu will offer the typical “focus on seasonal, organic ingredients sourced from mostly local farmers and purveyors when possible.” When is that not possible? When you live in Dallas.

Hanson’s resume includes gigs at Flora Street, French Laundry, Daniel Boulud’s DBGB Kitchen and Bar. Dal Canton was Tom Colicchio’s beverage director at Craft (Dallas and L.A.) and worked at The Cowboys Club, the private membership club at Cowboys HQ in Frisco.
