A new upscale Italian restaurant from a couple of well-respected restaurateurs is set to open late this month in Fort Worth.

Adam Jones and chef Blaine Staniford (Grace, Little Red Wasp) are set to open 61 Osteria  Tuesday, January 31 in downtown Fort Worth. Jones says the restaurant will focus on Itlaian wines and unfussy, traditional Italian dishes made with a focus on seasonality and Texas ingredients.

The 7,000-square-foot space, designed by Fort Worth-based architecture firm Ibañez Shaw Architecture, will offer seating for 120 people in the main dining room, 50 at the bar, and an additional 30 outdoor dining seats and 15 lounge seats.

The menu was designed to translate traditional dishes found throughout all 20 regions of Italy, through seasonal ingredients and local farms. The restaurant will offer a variety of starters, pasta dishes, meats and seafood.

61 Osteria will open for dinner only at first, with lunch, brunch, and family-style Sunday Suppers to follow. 500 W 7th St., Fort Worth.
