Pappas Bros. Steakhouse recruited a new wine director from a THREE Michelin-star restaurant to oversee their 31,000 bottle cellar


has a new wine director overseeing the Dallas restaurant’s 31,000-bottle collection.

Jon Walker, a UT-Arlington graduate, earned acclaim as a top sommelier at Michelin-starred Manresa restaurant in Northern California. When the three Michelin-star restaurant announced it would be closing last December,  following a storied, 20-year run, Walker was recruited back to Dallas to lead the Dallas Pappas Bros. wine team.

Pappas Bros. Steakhouse celebrates (and elevates) wine better than any other restaurant in Texas. In addition to their expansive cellar, guests will find either three or four certified sommeliers working the dining room each night; in most DFW restaurants, you’d be lucky to find one.

Walker replaces Barbara Werley, who managed the Wine Spectator Grand Award-winning cellar for more than a decade.
