Elm & Good has a talented new chef in charge


, the modern American eatery tucked inside The Kimpton Pittman Hotel on the edge of Deep Ellum, has named a new executive chef.

On the heels of a private chef gig and a short run at Barcelona Wine Bar in Dallas, chef Chad Starling has taken over the kitchen at Elm & Good. Way before that, he helmed Dallas Chop House, where we snapped the pic above (he’s the guy in a white chef’s coat holding a 450-day dry-aged ribeye steak).

Count us among his fans.

New dishes on the menu include hamachi crudo with pineapple leche de tigre, squid ink campanelle, and Iberico pork belly with bourbon-maple gastrique. Right now, though, we’re thinking about his whipped sheep’s cheese with grilled peaches, and BBQ heirloom carrots with carrot top pesto.
