One amazing brisket sandwich changed everything I thought I knew about this new BBQ joint

At first the new Chopped Prime Brisket Philly at Loop 9 BBQ looks like any ordinary BBQ sandwich: glossy buns, cheese, meat.

But the buns are brushed with rendered waygu brisket fat then briefly toasted, and the meat is slow-cooked brisket, chopped with bits of smokey bark and crisped on the flat top then anointed with melted cheese and roasted poblanos.

It’s an all-American sandwich with Hill Country roots, simple yet complex, and all of it gone too soon.  You can get a chopped brisket sandwich at any barbecue joint, but Loop 9’s is an eye-opener. A come-to-Jesus sandwich. I didn’t expect to like much at this BBQ joint that opened with little legit praise. But the first bite of this new menu item changes everything you think you know about Loop 9 BBQ.
