At first the new Chopped Prime Brisket Philly at Loop 9 BBQ looks like any ordinary BBQ sandwich: glossy buns, cheese, meat.
But the buns are brushed with rendered waygu brisket fat then briefly toasted, and the meat is slow-cooked brisket, chopped with bits of smokey bark and crisped on the flat top then anointed with melted cheese and roasted poblanos.
It’s an all-American sandwich with Hill Country roots, simple yet complex, and all of it gone too soon. You can get a chopped brisket sandwich at any barbecue joint, but Loop 9’s is an eye-opener. A come-to-Jesus sandwich. I didn’t expect to like much at this BBQ joint that opened with little legit praise.
