Brisket and bagels are a thing in this Trophy Club LTO this month


It starts with smoke. Ends with sourdough. And in between? Something that might just rewire how you feel about a bagel sandwich.

For one week only—May 20 to 25—two of Trophy Club’s best-loved food spots are teaming up for a limited-time collab that tastes like a Texas tailgate crashed a New York brunch. Dan’s Bagels, known for its tangy sourdough rings and lines out the door, is joining forces with The Original Roy Hutchins Barbeque.

On the menu? Two brisket-heavy bagel bombs.

There’s the Texas Twist: chopped brisket, pepper jack cheese, pickled onions, and Boar’s Head dill pickles, all tucked into a jalapeño cheddar bagel. It’s punchy, crunchy, smoky, and hot in the right places.

Then there’s the Brisket Sunrise, a breakfast-meets-barbecue heavyweight featuring bacon, egg, cheese, chopped brisket, and a full hash brown, all jammed into the same spicy bagel. It’s a nod to Hutchins’ famous Texas Twinkie, only now you can eat it with one hand while driving to baseball practice.

“By bringing together the gold standard of barbecue and bagels in Trophy Club, we’re proving that this little town packs a big punch when it comes to flavor,” said Dan Hilbert, the sourdough guy behind Dan’s Bagels.

Zack Hutchins, grandson of the pitmaster who started it all, sees it as a way to show off their brisket in a whole new light.

The collab runs Tuesday through Sunday (7 a.m. to 1 p.m.) at Dan’s Bagels on Trophy Lake Drive. Get there early. They’ve sold out before, and with brisket on the line, they’ll likely sell out again.
