A Wine Dinner That Travels Well: Five Countries, Five Courses at Fearing’s


On July 24, Fearing’s at The Ritz-Carlton, Dallas will offer a wine dinner built around a clever idea: five courses, five countries, five solid wines. Called The Flavor Express, the event unfolds like a European itinerary, each pairing thoughtfully designed to reflect the character of its region.

The evening is the latest in the hotel’s “Wine Tour of the World” series, led by sommelier Miguel Sayago, who will guide the experience not only with tasting notes but with a sense of place. Each stop on the journey is introduced as a destination (France, Spain, Italy, Portugal, Hungary) making this less a wine dinner and more a narrative in five pours.

The wines are well chosen. The evening begins in Burgundy with Albert Fontaine’s 2022 Pouilly-Fuisse Premier Cru, a mineral-driven Chardonnay with finesse and length. Spain follows with Alvaro Palacios’ Camins del Priorat 2022, a red blend that brings depth, spice, and the unmistakable power of Priorat’s slate soils. Tuscany is represented by Il Fauno di Arcanum 2021, a Merlot-based Super Tuscan with polished tannins and structure. From Portugal comes Quinta dos Murcas Reserva 2016, a Douro red built on dark fruit and earthy complexity. The journey ends in Tokaj with a classic: Royal Tokaji Aszu 5 Puttonyos 2018, amber-gold and layered with apricot, citrus, and botrytized richness.

Fearing’s, best known for Dean Fearing’s modern Texas cuisine, will step out of its Southwestern roots for the evening. The kitchen will craft a course for each region, leaning into European traditions while keeping the presentation refined and contemporary.
