Mamani to Open September 2 in Dallas’ Uptown With French Riviera-Inspired Menu and Michelin-Trained Chef


Dallas adds a notable restaurant on September 2, when Mamani opens at The Quad. Conceived by brothers Brandon and Henry Cohanim, the restaurant will bring contemporary French cooking to Uptown with both pedigree and precision. Its name honors the brothers’ grandmother, Mamani, who divided her life between Paris and the South of France and passed down a love of cooking and hospitality. That history frames the project, but execution will rest with executive chef Christophe De Lellis.

De Lellis grew up in Paris, graduated at the top of his class at Ecole Gregoire-Ferrandi, and built his reputation as executive chef at Joel Robuchon in Las Vegas. At Mamani, his approach will be anchored in bistronomie, the Paris-born style that elevates bistro cooking through technique and careful sourcing. His menu reads as exacting but not fussy: vitello tonnato with mustard seed and capers, a mushroom tart with egg yolk and hazelnuts, wild Dover sole in brown butter with Meyer lemon. A whole duck roasted “the Mamani way” will sit beside a 22-ounce dry-aged ribeye, and the meal will close with a Paris-Brest, classic and precise.

The Cohanim brothers insisted on penne arrabbiata, a dish they recall as a staple at family dinners in Los Angeles, appearing on the table whether or not the menu offered it. Its presence alongside veal cordon bleu with mornay and potato puree will underscore the balance Mamani aims for: personal memory set against polished French tradition.

The setting will reflect the same balance. London’s Bryan O’Sullivan Studio designed the 5,200-square-foot space with ombre plaster walls, marble details, bespoke furniture, and stained glass accents. A bar clad in burl wood frame a an onyx niche for spirits, while an enclosed garden terrace offer a breezy Mediterranean note. The goal is comfort within elegance, an atmosphere fit for both a weekday dinner and a Champagne celebration.

With a wine list strong in white Burgundy, cocktails leaning Italian, and a kitchen directed by a chef trained at the highest level, Mamani is aiming for clarity rather than excess.
