“Caprino Royale named a cheese after me,” says Dallas chef Graham Dodds


“They named a cheese for me,” says Graham Dodds, the chef at Central 214. “It’s a semi-soft Gouda style goat milk cheese, and it’s phenomenal.”

Dodds is the proud namesake of Graham’s Gold Reserve, a cheese made by Caprino Royale, the Waco micro-dairy specializing in farmstead goats’ milk cheeses.

“I asked them to do a goat Gouda for me,” Dodds told the Hatch. “This is the first one ready so in the next few weeks I’ll start seeing more.

Look for it soon on Central 214’s menu.
