Big chef changes at the Dallas Omni Hotel


Jason Weaver, the long-time exec chef at the Dallas Omni Hotel in downtown has been promoted to food and beverage director for the entire hotel. He now oversees Texas Spice, The Owners Box, Uptown Terrace, Lobby Lounge and Morsel’s, as well as in-room dining, banquets and catering.

Donald Chalko has been promoted as the Omni’s new executive chef. The two have introduced a new menu at Texas Spice and added a monthly “Third Friday” event that varies from craft beer dinners to whiskey-pairing dinners to farm-to-table grilled specialties.

Chalko and Weaver have a long history together, working with each other at the French Room at The Adolphus, the Las Vegas Mandarin Oriental and, beginning in 2011, at the Omni Dallas.
