Julio Peraza out as chef of Madrina, replaced by new Chicago recruit


Julio Peraza is no longer the chef at Madrina. He’s been replaced by David Fingerman, a Chicago recruit most recently behind the range at the Windy City’s Graham Elliot Bistro.

“We all have a lot of respect for Chef Pedraza,” says Madrina owner Sal Jafar through a company spokesman. “He was an instrumental part of opening Madrina, and we wish him all the best in this next stage of his life.”

Fingerman is reworking Madrina’s French-Mexican menu, adding a horchata “pot au creme” (yep, that’s what they’re calling it) and a double cut pork chop with pasilla chili bordelaise, among other items.
