Chef Richard Triptow’s $49 summer prix fixe menu shimmers at Dallas Fish Market
Dallas Fish Market chef Richard Triptow has rolled out a special three-course $49 prix fixe menu for summer. The elegant dining room — blues and whites and crisp linens — is a buoy’s throw from Main Street downtown, but that’s about all that feels landlocked about this restaurant. Triptow has staked out a coastal fish camp, serving jewels like briny oysters with cucumber liquor, almond milk-poached cod, buttery arctic char in a tart orange-soy reduction, and blue crab seasoned with a drizzle of curry on a bright green slick of chilled English pea soup. His tuna tartare, pristine fish enrobed in curls of avocado then crowned with a supreme of ruby red grapefruit and a dollop of caviar, is as beautiful as it is delicious.
Maybe few would rejoice in Triptow’s riffs in Maine, but his cooking here is legit.
