Former Le Cordon Bleu culinary school reopens as Pilotworks, a shareable, rentable commercial kitchen space for entrepreneurs


Hardly a week goes by that someone doesn’t tell me they’re looking for rentable commercial kitchen space for a short-term gig. Now a Brooklyn-based culinary incubator called  Pilotworks sends word that they’ve taken over the former Le Cordon Bleu culinary school (11830 Webb Chapel Rd.), reopening the space as a food incubator and shared commercial kitchen. Pilotworks operates similar kitchens in Portland MI, Chicago, Providence RI and Newark NJ.

Pilotworks says their Dallas location offers “state-of-the-art equipment, high ceilings, and great natural light, as well as provides food businesses in Dallas the opportunity to start, scale, and pursue their culinary DREAMS.” When you use all caps, you’re either REALLY SERIOUS about something, or you’re Richard Pollak, whose computer’s caps lock button seems unable to release.

“Other offerings include educational classes and workshops, access to a national mentor network and tailored membership programs, and rentable space for pop-up dinners, culinary classes and food photography,” says Pilotworks.

Pilotworks Dallas is taking applications for food businesses interested in using the shared kitchen space. The membership model can accommodate businesses of any size and offers a flexible pricing structure that dramatically lowers the barrier to entry for new businesses looking to make a leap into a commercial kitchen.
