Del Frisco’s Founder Dee Lincoln Opening New Venue in Uptown
Last July, we told you that Dee Lincoln was going to expand her Bubble Bar empire into a freestanding location in Uptown. Well, it’s official. She says she’s signed a lease and is targeting an opening date for sometime after the first of the year. This Bubble Bar will serve cockails, little snacks and sport a living room feel. And a patio.

Dee Lincoln will open Dee Lincoln’s Tasting Room & Bubble Bar at Rosewood Court, 2101 Cedar Springs Road (the corner of Pearl Street and Cedar Springs) in the first quarter of 2011.
As her first freestanding location for a wine lounge, this new concept is a modified version of the proven success of Dee Lincoln’s Tasting Room & Bubble Bar she opened in partnership with the Dallas Cowboys, Legends Hospitality Management and Ricky Comardelle at Cowboys Stadium last year. Comardelle will also be a partner at the Rosewood Court location.
According to Lincoln, the innovative “living room” lounge concept will feature many state-of-the-art components with avant-garde updates to traditional bars.
“Life is for livin’,” said Lincoln. “We will offer state-of-the-art, innovative presentations of wines, champagnes, specialty martinis, spirits and small plates served in an elegant, upscale setting however the atmosphere will be unpretentious, comfortable and fun. I am creating a living room lounge feel, not a restaurant/bar ambiance. I want our customers to feel they are guests in my living room promoting the American tradition of sharing good food, great wines and cocktails with close friends creating lasting memories.”
“I looked at many venues and selected Rosewood Court because of our mutual belief in delivering high quality and luxury to our brands. I wanted a perfect fit and Rosewood Court is indeed that,” she continued.
The Tasting Room area will invite wine lovers to “Experience Wines By The Ounce” from high-end wine machines imported from Italy which deliver wines at the perfect temperature.
Guests can explore forty-eight different varieties tasting as little as two ounces of famous wines to enjoying the excitement of a full glass. Bottle service will be offered for those who want to share, and well-known, high-end wines by the glass will be featured daily.
The wine menu is divided into sections including” “Dee Vine Wines,” “White Stars,” “Mixed Company,” “Legendary Reds,” and “Dee’s Personal Friends” so named because of her personal relationships in Napa Valley. Lincoln will invite vintners to make appearances, and hospitable sommeliers will offer personal service.
The Tasting Room concept will define and carry over to the culinary creations offered in individual samplings or Shared Plates for two to entire parties. Small plates will vary from high-end cheeses, in-house sliced meats and specialty flatbreads all the way to caviar and foie gras. According to Lincoln, guests can expect to experience flavors “around the globe.”
The wine lounge will also feature a selection of specialty chocolates and other sweet surprises to be paired with sauternes, ice wines, ports, Madiera’s and late harvest Rieslings, zinfandels and merlots.
The Bubble Bar will reflect the national champagne craze with “Bubbles By The Glass,” champagne cocktails and sparkling wines.
Lincoln will feature a variety of champagnes and sparkling wines paired with approachable foods showcasing the bubbly and creating revolutionary flavors for the palette.
“Champagne is usually enjoyed mostly in a celebratory fashion. We will feature the resurgent changes in champagnes from offering unique champagne cocktails served in modern glassware to showcasing the bubbly as a popular choice to savor with culinary masterpieces,” Lincoln said.
The full bar will also feature spirits, cognacs and hand-shaken martinis. Lincoln and her team have created the martini recipes.
Favorites include the “D’Legend” which is a classic vodka or gin with bleu cheese and jalapeno olives; the “Deetox Tini,” a mixture of blueberry vodka and pomegranate juice; “Ricky’s Water Boy” and the “Bella D,” which is Lincoln’s personal version of the Cosmopolitan.
The 4,000-square-foot wine lounge will be sleek and sexy featuring crisp white bubble walls and shimmering silver throughout the space accented by floor-to-ceiling white Italian leather banquettes, a touch of elegant chocolate browns and cranberry accents to create the contemporary setting.
The lounge’s ground floor level is 2,200 square feet and provides several areas for private entertaining. An estimated 1,000-square-foot mezzanine with a large wine cellar will provide a relaxing oasis for customers who want to escape networking.
An 800-square-foot patio will create the feel of outdoor living and accommodate those who select a hand-made cigar to pair with cognacs.
