First Bites: RedFork, New resto/pub from Former Craft Chef Jeff Harris

Jeff Harris is a talented chef. As execuchef at Tom Colicchio’s Craft in Dallas, Harris turned out some of the most carefully crafted meals in town. Now on his own as the top toque at RedFork, the new gastropub that opened this week on the east end of town, Harris extends that culinary precision to a series of menus that are meant to accompany your imbibing experience rather than the other way around. We’ll see if Harris can succeed where Meddlesome Moth all-too-often falls short: the gastro part of gastropub.

“We want RedFork to be a restaurant and bar that people want to come to all the time, not just a destination spot,” says Harris, through his publicist. Of his sous chef, Matt Balke of the late York Street, Harris says, “He shares the same passion for food that I do, and I know that we will be able to bring something special to Dallas and really showcase some of the local flavors of the area.”

RedFork Tavern will serve dinner (4-11pm), a late night menu (11pm-2am), and weekend brunch (11-2pm).

Here are the menus.
