Chef Matt McCallister opening new restaurant, called FT 33, in Dallas design district
Matt McCallister is calling his new restaurant project “FT 33,” short for “fire table 33.”
The restaurant, to be located a half block east of Oak Lawn Avenue at 1617 Hi Line Drive in the Dallas Design district, is scheduled to open this summer.
McCallister says FT 33 will serve “handcrafted American cuisine using modern techniques with an emphasis on Texas ingredients.”
In the language of the professional kitchen, a chef or expediter calls out “Fire table xyz” to the kitchen staff when a next course should be served to a particular table of diners. That’s the cue for the chefs to finish cooking, plating and assembling all the dishes to be served to that table at that time.
FT 33 will have 33 tables, hence the number 33. Tina is not expected to make an appearance.
