3 Stacks BBQ Pushes Back Opening to February 9
Just like brisket, sometimes a restaurant isn’t ready till it’s ready. The folks at 3 Stacks BBQ in Frisco, where ‘Meat Whisperer” Trace Arnold holds court, have pushed back their opening date a day, to February 9.
I caught a sneak preview last night, and think the place has a truckload of potential. I loved their jalepano-cheddar sausage, though it needs to warmed up more. And their briskets, deeply barked from 12 hours in a wood-fueled J&R Oyler pit, were tender and properly rendered, but I hope they’ll consider amping up the smoke and seasonings.
Anyway, for commercial barbecue, 3 Stacks could be among the better joints in town.
