The new store marks Pollo Tropical’s push into the Texas market, important because the chain is owned by Texas-based Fiesta Restaurant Group, which also owns Taco Cabana.
The fast-casual chain touts its “bold and tangy flavors using savory island spices (hmmm… Spice Island?), mixed herbs and citrus” blended into rubs and marinades that is uses to season dishes that include oink, moo and cluck. The first Pollo Tropical opened in 1988 in Miami.
