Brent Hammer leaves The Establishment, takes over the kitchen at PIE 3.14


has been a buzzy water cooler topic the last few weeks, and not in a good way. The place opened months behind schedule, business has been rocky and now it looks like their chef, Brent Hammer, has departed for greener pastures.

Hammer, a former chef at Hibiscus on Henderson and Whiskey Cake Kitchen, has landed in the center of the pie plate at PIE 3.14, Sean Conner’s and Billy Stovall’s excellent pizza place in Castle Hills. Conner confirmed that Hammer takes over exec chef duties at PIE 3.14 tomorrow.

“I worked with Brent at Whiskey Cake, where he really impressed me with his creativity and talent,” Conner told me. “He’ll help us improve the menu here, launch a weekend brunch, plus help us with a few other concepts we have in the works.”
