Chef Brian Zenner leaving Oak to open The Mitchell, On Premise


Brian Zenner, the chef of Oak Restaurant, told me yesterday afternoon that he’s leaving the Dallas Design District restaurant to open The Mitchell and On Premise, two new concepts from restaurateurs Adam Salazar and Chris Beardon.

“It’s has been a heck of a 3.5 years,” Zenner says.  The Mitchell will inhabit the former Chesterfield’s on Main Street in downtown Dallas and will offer a snacky menu of “oysters, caviar, crudo, charcuterie.”  Rusty Mendoza, who opened Pakpao and Belly & Trumpet with Zenner, will lead the kitchen at the Mitchell. Both Zenner and Mendoza worked together at the Mansion on Turtle Creek

On Premise, a new restaurant with a menu still in the planning stages, will inhabit the former Lemongrass Asian Bistro space in Deep Ellum and is slated to open in early March. “Right now, we are thinking nightly fish and meat specials,” Zenner allowed.
Zenner says his last day at Oak hasn’t yet been inked.
