Tristan Simon, founder of Hibiscus, Fireside Pies and CBD Provisions, is opening a new restaurant in Dallas


Tristan Simon, once the high-flying restaurateur behind Hibiscus, The Porch, Fireside Pies, CBD Provisions and others before selling his interests and moving out of state, is back in the game. He’s recently been helping guide the renovation of the downtown Adolphus Hotel. Now, he’s stepping out in front.

Word comes today that Simon’s formed a new company named Rebees and partnering with Victory Park on a slew of new food and beverage projects there, including a 6,000-square-foot restaurant, a 4,000-square-foot retail emporium that will focus on locally made goods and a 3,500-square-foot cafe. A Victory Park spokesman says they’re all are slated to open late next year on Victory Park Lane, across from Cinépolis in the former LFT space, covering the entire block between Museum Way and High Market Street.

Rebels is described as “an advisory, development and management firm that creates unique programming for commercial real estate and hotel projects.”
