Fort Worth Chef Tim Love: Barter, new Dallas restaurant, will open “next week” with a Love-designed menu

There’s finally some truth to the long-mumured rumors that Tim Love (Lonesome Dove Western Bistro, Woodshed Smokehouse) will open a Dallas restaurant. Some truth, meaning not Dragnet truth. More like Colbert Report truthiness.

Love told the Hatch that Barter, the Dallas restaurant for which he is c0-creating the menu, will open next week. That’s assuming, says Love, that staff training and practice runs continue to go well.

Barter will inhabit the former Private Social / PS space on McKinney Avenue owned by brothers Patrick and Michael Halbert. Andrew Dilda will be exec chef, but Tim Love is collaborating on the menu. Rocco Milano, formerly of PS, will be Barter’s bar man.

A few months ago, Love was rumored to be taking over that same Private Social space for a solo venture, a rumor Love denied when we asked. Looks like the Halberts didn’t want to let go of the space and instead brought Love aboard to craft Barter’s menu.

Love is a super nice guy, but he sure has been heaping a lot on his plate. In addition to Barter, Love is involved in a bazillion Food & Wine Magazine events, owns a bar in Fort Worth, three restaurants in Fort Worth (Love Burger, Woodshed, Lonesome Dove), a steakhouse in Denton (Queenie’s), and, as we told you a few weeks ago, he’s now in charge of all the food and catering outlets at the PGA Tour’s Colonial golf tournament in the spring.
