Guest chef taking over Fearing’s kitchen for important Cinco de Mayo dinner


Eric Dreyer, the chef de cuisine at Fearing’s restaurant in the Ritz-Carlton Dallas, tells Hatch that he and Dean Fearing have invited a Mexico chef to take over their kitchen for Cinco de Mayo this year, and Dreyer says the guy is really talented.

The guest chef will be José Meza Arróyave, the top toque at Restaurante Carolina at Mexico’s St. Regis Punta Mita Resort.

Meza will be serving a three-course menu on Thursday, May 5, that features blue corn quesadillas, ceviches, carne asado and rice pudding. I can’t say that sounds particularly daring or interesting, but Dreyer swears this will be a dinner worth booking.

Mesa refined his cooking while working at Mexico City’s highly regarded Pujol restaurant under Enrique Olvera and later as Olvera’s top chef at Moxi, his restaurant in San Miguel de Allende.

Fearing’s Cinco de Mayo dinner experience will be offered only on Thursday, May 5, beginning at 6 p.m. $150 plus tax and gratuity, 214-922-4848.
