Trinity Grove Taking Applications for “Pop Up” Restaurant Space


A lynchpin of the new Trinity Grove restaurant development in Dallas is their restaurant incubator, a group of small spaces where chefs can set up shop and try out new ideas. If they work, Trinity Grove’s owners will help expand the fledgling concept into multiple units so everyone can make multiple bucks. (Resto Gastro Bistro sure hopes it works.)

Now comes a new spin on pop-up Dallas restaurants: Kitchen LTO (Limited Time Only).

Kitchen LTO owner Case Caldwell is opening a restaurant whose mission and menu will change quarterly (hence the LTO moniker). Different chef, different concept, different decor, different menu every quarter.

If you’d rather launch your start-up  restaurant in an air-conditioned space rather than through the peep hole of a food truck, Kitchen LTO may be the outlet you’re looking for. And Caldwell is probably looking for you.

If you’re a Dallas chef or interior designer interested in applying for one of the quarterly gigs, give her a shout.

Apparently, Caldwell expects a line of applicants. She’s designated a “screening committee” to help select the winners. Who’s on the committee? Her PR person sends this:
