Here’s an idea: have dinner al fresco in the rooftop garden at downtown’s Fairmont Hotel.  Chef Andre Natera’s just rolled out the new spring menu at the Pyramid, a surprisingly good restaurant in an otherwise business travelers’ hotel. I’ve raved about Natera’s cooking here and here. I’m not about to stop. Right now, he’s serving a dish that tastes  as good as spring itself: house made sweet pea ravioli. His are perfectly al dente, little orbs containing a spoonful of sweet, fresh peas creamed with mascarpone. He then anoints them with more sweet peas, sprinkled around a soft swirl of pea butter and mushrooms, and, finally, a few curls of watercress. Together, they create One Perfect Dish.
