This Just In: Hugo Galvan out as chef at El Bolero, still-new Dallas Design District restaurant


El Bolero, the Dallas Design District Mexican concept from Richard and Tiffanee Ellman and partner John Paul Valverde (Apheleia Restaurant, which owns Oak and Pakpao), confirmed that they parted ways this afternoon with their opening chef, Hugo Galvan. 

Barely open two months, El Bolero is looking for its footing. No replacement has been named for Galvan, who previously cooked at Fort Worth’s Hacienda San Miguel and at Cafe San Miguel on Henderson Avenue.
