Don’t Look for Stephan Pyles in Dallas Next Week


“We’re gonna fight it out,” says Stephan Pyles of his upcoming role as cheesemaker Paula Lambert’s sous chef when the pair host a cooking school in southwest France beginning next week. “It’ll be the perfect opportunity for humility.”

Or did he mean humiliation? Nah, Pyles and Lambert are old friends. Besides, Lambert wouldn’t dare jeopardize her favored Mozzarella Company’s cheese placement on Pyles menus.

Lambert hosts these cooking class twice a year, “exploring markets,” says her Web site, “visiting chateaux and medieval villages, tasting wonderful cheeses, and cooking with fabulous local ingredients.”

The class is sold out, but there’s a reprise October 11-18. (It would be cool to sub for Pyles in October, but I think SideDish‘s Nancy Nichols may be on the short list to be Paula’s next sous.)

If you aren’t heading to France with Lambert, you might want to attend one of her Saturday hands-on cheesemaking courses at her store in Dallas.
