Whole Hog dinner at Restaurant AVA on Sunday from chefs Randall Copeland, Scott Romano, Matt McCallister and Chad Bowen
If I wasn’t going to be at a steer roast this Sunday, I’d definitely be at Restaurant AVA, in Rockwall, for this big pig dinner. Five of my favorite chefs–Randall Copeland and Nathan Tate (AVA, cooking tenderloin and trotters), Scott Romano (formerly of Charlie Palmer, cooking belly), Matt McCallsiter (of FT33, cooking head) and Chad Bowen (Culpepper’s, cooking loin) are collaborating on a pig free-for-all (well, $49-for-all, actually).
$49 buys you a seat at AVA’s six-course whole hog dinner at 6:30 pm on Sunday, April 22. Copeland purchased the hog from the Rockwall 4H and FFA livestock auction last month. “So we invited a few chef friends to come and help us cook a wonderful dinner celebrating the greatness that is pork,” writes Copeland. “Each chef chose a specific cut of the pig and will be creating his own dish using it.” What’s the lineup?
