3 Stacks Smoke and Tap House, in Frisco, Debuts February 8 with “Meat Whisperer,” 36 Draft Beers

It’s not every day you learn about another Meat Whisperer in the area (I thought I was one of the few), but 3 Stacks Smoke & Tap House, billing itself as a contemporary smokehouse with a full bar and 36 American beers on tap, opens February 8.

Trace Arnold is their slow-smoked meat prophet, and I’m looking forward to seeing what he does with smoked salmon, ribs, meats and fish. Arnold once built an 80-foot long smoker and grill (um, a grill and a smoker don’t usually play well together as a Swiss Army Knife), but, hey, the guy’s people say he has the chops.

His people are throwing down lots of bravado, too, saying Arnold is moving into Frisco “to show Frisco how smoked meats are done.”

Maybe he’s got it. Maybe he doesn’t. I’m gonna need more than a tall mug of 3 Stacks’ draft root beer if Arnold’s meats need even a drop of his “specially blended sauces.” But if his rubs are right and his smoke is clean, Arnold and I are going to get along fabulously.

I’m sure hoping it’s good. This town could use another Meat Whisperer.
