Barman Sean Connor to open Pie 3.14, a family-friendly pizza place, in Castle Hills


When we told you last week that Sean Connor, the barman who infused Whiskey Cake and Mexican Sugar with some of the tastiest craft cocktails in the city, was on his way through the exit door, we weren’t sure where he was headed.

Turns out he’s going to Castle Hills, the golf-centric community in Lewisville.

“I’m finally opening my own place,” Connor told me after this story ran on the Hatch. “It’s called ‘Pie 3.14’ but it’s a play on words and math and images, so it’s spelled P1.E 3.14. The words kind of form a mirror image when they’re written out.

Before Whiskey Cake and Mexican Sugar, Connor spent nearly a decade at Fireside Pies, which is where he says he picked up the itch for pizza. Pie 3.14’s pizzas will be similarly styled, says Connor. , “with a thick, doughy crust.“

Connor says Pie 3.14 will also serve “sharable plates, pizza rolls, cool sandwiches, craft cocktails, beer and wine on tap,” all served from an open kitchen. The family-friendly restaurant will seat 75 inside and another 70 on the outdoor patio that faces a pond on Castle Hills’ golf course. If you’re fortunate enough to live in Castle Hills, Pie 3.14 plans to deliver food to you via golf cart.

“I’ve wanted to do this forever,” adds Connor.

Pie 3.14 is slated to open in early May.
