Uptown Shuffle: Capital Grille chef Mo Assi leaves for Perry’s Steakhouse

Long-time Capital Grille chef/partner Mo Assi confirmed today that he’s turned in his Darden apron, rolled up his knives and headed down the street to Perry’s Steakhouse in Uptown. Here’s hoping he can fix that four-finger tall Perry’s pork chop, which always hits my table dry and overcooked.

Prior to joining the Capital Grille Dallas in 2012, Assi was a chef at Dallas Chop House, one of my favorite meateries in town.
