Deep Dish: New burger concept called The Royale to debut in Plano, from owners of Oak, Pakpao, with menu by John Tesar


The owners of Oak, Pakpao and El Bolero are expanding again.

Co-owner Tiffanee Ellman confirmed that her company’s next venture will be a gourmet burger-centric concept called The Royale. And wouldn’t you know, burgermeister John Tesar, who makes one hell of a burger at Knife Modern Steakhouse and a half-dozen really good burgers at his defunct Commissary, confirmed that he will be creating The Royale’s menu.  (Tesar is already a consultant/partner/chef at Oak and El Bolero.)

Tesar provided us a glimpse of The Royale’s preliminary menu. Noteworthy items include burgers constructed of 100% grass-fed beef , plus variations that include pasture-raised lamb, soft shell crabs, Maine lobster, jerk chicken, pulled pork, turkey, bison, salmon — even a couple of vegan options made with quinoa and mushrooms.

There will also be salads and decadent poutines, some topped with steak, lobster or bacon and eggs.

The Royal is expected to open in the fourth quarter and will be located in North Plano near Dallas North Tollway and Parker Roads. Royce Ring/Plan B is handling the design.
