Scott Romano to run the kitchen of new Theodore, opening this fall in Dallas


Word arrived this morning that Tim Byres’ new restaurant, The Theodore, would open this fall with former Charlie Palmer (and Nick & Sam’s) chef Scott Romano in the top chef position. Good to see Romano back in another lead role. Who else is on the team?

GMO Tristan (FT22, Boulevardier, Remedy) and Brooks Cameron (recently departed FT33) will be sous chefs, Marlene Duke (Ritz Carlton Dallas) will handle the pastries, and, transferring from Bolsa, Jonathan Knecht and Kyle Hilla (Knecht as GM, Hilla as bar manager).

“It has really become more and more about experience versus food and drink,” says Byres via a press release. “The more I think about it, the reason why I got into the restaurant business is because of the energy, spirit, fun, and sharing community. We have a great team.”

He’s right.
