Tesar and Legacy Hall co-developer Jack Gibbons confirmed to EscapeHatch today that the Dallas chef and his business partner, George Stereos, will open Knife Burger, a burger-centric, fast-casual spot at the ginormous Legacy Hall food hall currently under construction at Legacy West in Plano. The hall is expected to open late next year with focused, independent projects from more than 20 marquee chefs.

Though Knife Burger’s menu is still in development, Tesar says we can expect him to feature riffs on the burgers he made popular at Knife, his modern temple to extreme dry-aged beef at the Dallas Highland Hotel near SMU.

One thing we know for sure, though: Knife Burgers will be made with beef from Cameron, Texas-based 44 Farms — the same beef Tesar uses in his award-winning burgers at Knife.
