It’s Heim Time! FW’s Heim Barbecue soft-opens to the public today

Fort Worth’s favorite barbecue makes the final transition from trailer to bricks-and-mortar restaurant with the soft opening of Heim Barbecue today. Word got out fast that owners (and husband-and-wife pitmasters) Emma and Travis Heim were quietly opening for lunch today; the result was a line of customers that stretched down the block by noon.

The place is a real looker, too, with reclaimed woods, a minty color palette and a brick-tiled community lunch counter running down the center. Make your way through the line, place your order from a cashier then wait for the square pager to jiggle when your food is ready for pick-up. The food is smoked out back on three new oak-fueled Oyler pits.

Of course, Travis’ bacon burnt ends are on the menu, just as sweet, smokey and crispy-edged as ever. So is the excellent brisket, the mahoganied pork ribs, the jalapeño-cheddar sausage and kick-ass helpings of potato salad, collard greens and pinto beans. Skip the new-to-the-menu turkey; who eats turkey at a bbq joint anyway?
