San Salvaje, new Stephan Pyles restaurant in downtown Dallas, will open April 28
Remember San Salvaje, the pan-Latin restaurant we told you would replace chef Stephan Pyles’ short-lived Samar in downtown Dallas? Well, Pyles confirmed today that it’ll open the celebration of “pagan indigenous culture with a host of saints revered in Latin America.” on April 28.
Pyles traipsed through wide swaths of Latin America to find recipes and flavors to inform San Salvaje’s menu. He told EscapeHatch that the Wild Saint would incorporate “everything south of Harlingen,” including tacos and tamales made with fresh nixtamal, arepas, empanadas, ceviches, tiraditos, plus elements borrowed from Cuba and Peru.”
Alex Astranti, most recently executive sous at Stampede 66, will run the Saintly show.
